Filipino Laing Recipe

Laing, it is a popular Filipino vegetable recipe that originate in Province of Bicol. Bicol is situated in a southern part of luzon on which majority of people rely on agriculture and fisheries as their means of livelihood. Bicolanos cuisine was influenced by their natural resources as they always use coconut cream and chilli on which are abundant on their place , they also cook exotic seafood recipes by incorporating shark and stingray meat on their recipe. Filipino from other region love to prepare Bicolanos recipe as filipino are so fond of eating spicy food recipe. Anyway here is my method of preparing this spicy Bicolano food, Laing recipe.

Ingredient:

3 bundle ot dry taro leaves, shreded
taro leaves stalk, peel and cut into 1″ strips
1 cup of coconut milk( gata ng niyog)
1 cup of coconut cream ( kakang gata)
2-3 tbsp garlic, minced
1 pc onion, sliced
3 thumb size ginger, peel and julienne
100 gram pork belly (cube)
100 gram labahita dried fish
2-4 pcs hot chilli
vetsin
salt to taste

Procedure of Cooking Laing:

In a pot, pour in coconut milk, daing na labahita, liempo, coconut milk, garlic, onion, ginger, sili,1 tbsp salt. Bring to boil and simmer until the sauce decreases in half. Add kakang gata and bring to boil again until the sauces almost dry. Salt to taste and served laing recipe wahile it is hot along with hot steamy white rice.Adobo Recipe Ingredient:

1 kg chicken, wash and cut into serving pcs
3/4 cop soysauce
1/2 cup vinegar
3-5 tbsp garlic, minced
1/2 tsp ground peppercorn
2 pcs laurel leaves
vetsin
salt to taste
1 pc chicken cube seasoning

Procedure of Cooking:

In a pot, pour in the following ingredient Chicken, garlic, peppercorn, chicken seasoning cube, vinegar, soysauce, laurel leaves. Bring to boil and simmer until chicken meat tenders, add vetsin and salt if needed. Served newly chicken adobo with hot steamy rice.

I was a little reluctant at first to use grape jelly in this recipe. But after trying it, I question no more! This recipe combines tender eggplant with a sweet tomato sauce topped with a nice amount of cheese. You cant go wrong! Its delicious!

Ingredients:

1 large eggplant, peeled, and cut into 1/4-inch thick slices
Flour, for dusting
Oil, for frying
Seasoned salt, to taste
1 (16 ounce) jar meat-flavored sauce
1/4 cup grape jelly
1 (14 ounce) can sliced-style stewed tomatoes
8 slices mozzarella cheese
Preparation:

Moisten eggplant slices and coat lightly in flour and dust with salt. Brown slices in hot oil. When fork tender and golden brown transfer to a jelly roll pan. Cover loosely with foil and bake at 375 degrees F for about 20 minutes or until tender. You should have about 8 slices of eggplant.

For the Sauce: In a saucepan, combine sauce, jelly and tomatoes that have been broken up with a fork. Heat on medium until hot, but do not boil. Make sure the jelly is melted.

Arrange 2 eggplant slices on each plate. Cover each with 2 slices of mozzarella. Ladle sauce over all, not to cover completely. Place plates in 375 degrees F oven to melt the cheese, and serve right away.

Yields 4 servings.

I have a lot of friends and clients with gluten intolerance and/or celiac disease. When I started cooking for them, I began a journey of learning and a new window on the world was opened to me. I am continually seeking out information, researching, talking to people about their experience and experimenting in the kitchen.


This recipe is one of many that I offer in my Gluten Free cooking classes (where I meet the most amazing people!). I am always asking my students and clients what they want – and as it turns out, what they want is the basics, made to taste good. Crazy concept, isn’t it? We’re not reinventing the wheel here, just learning how to roll in a different way.


Peanut butter and bananas (and chocolate) are such a great combination! These muffins are delicious. Moist and tender, chock full of flavor. They taste like they came from a fancy bakery and their appeal is universal – adults and kids love them. They are an great “beginner” recipe for first-time gluten free bakers. The combination of white and brown rice flours gives a bit of body, tenderness and flavor and the peanut butter and bananas make a really moist muffin. The addition of chocolate chips is pure decadence.


Make sure not to overmix the muffin batter – it’s okay if there are a few streaks of dry ingredients. And check them after 10 minutes in the oven. Poke them with a toothpick – when it comes out with a few moist crumbs clinging to it they are done.




Gluten Free Peanut Butter & Banana Muffin Recipe


3 bananas
2 large eggs
1/2 cup evaporated cane juice or natural (cane) sugar
1/2 cup natural peanut butter (creamy or crunchy)
1 1/4 cups white rice flour
1/2 cup brown rice flour
2 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1/3 cup butter, melted
1/2 cup plain yogurt, thinned with a little milk
1 cup semi-sweet chocolate chips (optional)


Preheat oven to 375 degrees. Place oven rack in the middle of the oven. Line muffin tin with paper liners and set aside.

Sift dry ingredients together.


Mash bananas and peanut butter together until well combined (the mixture can be a little chunky). Mix in eggs and sugar and combine well. Stir in the vanilla, melted butter and buttermilk. Add dry ingredients and stir until just combined. Add chocolate chips (if using).


Scoop the batter into prepared muffin cups. Bake 12 minutes or until muffins are firm to the touch (check after 10 minutes). Remove from oven and let muffins cool 5 minutes before placing on wire racks.

Turn the prawn over and baste again, cooking for another 2
minutes. Smaller prawn will be done at this point, but continue
basting and turning larger prawn until they are pink and cooked
through. Remove from heat immediately when done, as they will get
tough of overcooked. Use any remaining sauce for a dip for the prawns.

2. Australian Chocolate Crackles

24 Servings
Ingredients

* 150 g copha,melted
o 1/2 c rice bubbles
* 60 g coconut dessicated
* 15 g cocoa
* artificial sweetener taste

Mix dry ingredients. Add melted copha and mix well. Divide into 24
patty pan papers.

3. Baked Stuffed Mullet (Australian food recipes)

4 Servings

o large,beautiful, fat mullet
* 250 g spaghetti,cooked
* onion
* bay leaves
* T tomato paste
* 1 t sugar
* clove garlic,crushed and
* _,Chopped
* small capsicum (green
* _ pepper),chopped
* 1 1/2 T parsley,chopped
* sticks celery,chopped
* _ finely
* 1/2 t ginger
* 1/2 t basil
* salt and pepper
* dr tabasco sauce
* 1 T olive (or vegetable oil)
* oyster sauce (optional)

Prepare mullet for baking by removing backbone, leaving it flat,
ready for stuffing, sewing or tying up. Make sure fish is cleaned,
scaled and washed thoroughly with black parts rubbed off. Remove as
many bones as possible.

Combine stuffing ingredients and add oil. This keeps spaghetti
workable (soft) with other ingredients.

Fill fish with stuffing. Tie securely, use small skewers or sew up
sides of fish where necessary. Place fish on oiled baking dish and
place in hot oven. Reduce heat and cook slowly for 30-45 minutes,
according to fish size. Test to see if cooked. When cooked, remove
from oven and when cool enough to handle, remove string or other
securing device. This fish can be glazed with geletine or oyster
sauce.

4. Blender Lemon Drink(Australian food recipes)

2 Servings

o lemons – thin skinned
* 45 ml caster sugar
* 560 ml water
* egg
o ice cubes
* mint sprigs

Wipe lemons, cut into pieces and place in blender. Add sugar and
water and blend for 30 seconds. Wash egg and add, whole to the
blender with the ice cubes. Replace lid and blend for further 30
seconds. Strain into a jug or glass, add ice if liked and decorate
with mint sprigs.

5. Brawn (Australian food recipes)

1 Servings

2 pig’s trotters
1 1/2 lb knuckle of veal
1 shin of beef
4 bay leaves
6 cloves
1/2 t peppercorns
1/2 t whole allspice
1 ds salt
1/2 c vinegar

Halve pig’s trotters and meat, put in saucepan and just cover with
water, also add bay leaves, cloves, pepper-corns, allspice and salt.
Let boil for 3 – 4 hours. When cooked take out meat and chop finely,
remove all bones, strain liquid into a basin, add chopped meat and
vinegar, pepper and salt to taste. Put over fire and let come to
boil. Pour into basins to set.

Directions
- Preheat oven to 400 degrees F (200 degrees C).
- In a mixing bowl, combine the zucchini, biscuit baking mix, Parmesan, Cheddar, eggs, vegetable oil, onion, garlic, parsley, salt and oregano.
- Spread the mixture into a greased 9×13 inch baking pan and bake for 25 to 30 minutes, until golden brown.
- Allow the mixture to cool. Cut into small squares and serve warm or cold.

Zucchini Casserole
Tasty rich & custard dish with mayonnaise, eggs, & cheese, topped by crackers. This can be made with either summer squash or zucchini or both.

Ingredients
- 1 cup mayonnaise
- 6 zucchini, sliced
- 2 eggs, beaten
- 1 small onion, diced
- 2 tablespoons butter, diced
- 1 cup grated Romano cheese
- 1/4 teaspoon ground black pepper
- 24 buttery round crackers, crushed

Directions
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9×13 baking pan with cooking spray.
- Place sliced zucchini in a large saucepan. Pour in enough water to cover, and bring to boil over high heat. Boil until barely tender, about 2 minutes. Drain and set aside.
- In a large bowl, whisk together eggs and mayonnaise until smooth. Stir in onion, cheese, and pepper. Fold in squash and then pour mixture into prepared baking pan. Sprinkle with crushed crackers, then dot evenly with diced butter.
- Bake in the preheated oven for 30 to 40 minutes, until the middle of casserole is no longer moist, and springs back when gently pressed.

Zucchini And Squash Casserole

- 2 medium yellow squash
- 2 large zucchini
- 1 Vidalia onions, thinly sliced
- 2 large tomatoes, sliced
- 2 cups grated Romano cheese

Directions
- Preheat oven to 375 degrees F (190 degrees C).
- Cut the zucchini and squash into long, thin layers. Lightly grease a 7×11-inch baking dish and layer the squash, zucchini, onion and tomatoes into the baking dish. Ingredients
- 3 cups tiny sliced unpeeled Zucchini (4 small)
- 1 cup Original Bisquick® mix
- 1/2 cup finely chopped onion
- 1/2 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon dried marjoram or oregano leaves
- 1/8 teaspoon pepper
- 1 garlic clove, finely chopped
- 1/2 cup vegetable oil
- 4 eggs, slightly beaten
- 1 garlic clove, finely chopped

Directions
- Heat oven to 350?F. Grease bottom and sides of rectangular pan, 13x9x2 inches.
- Stir together all ingredients. Spread in pan.
- Bake for about 25 minutes or until golden brown. Cut into 2-inch squares; cut squares diagonally in half into triangles.
